The fact that the pages are UTF-8 sometimes causes problems when building on a remote server.

From what morty's said to me, the encoding defaults to UTF8 if you have Ruby 2, or a more recent version of Jekyll than Github uses, or your machine's locale specifies it. However it would be helpful @BillSwirrl if you were able to merge this PR to make it apply in all cases, what with people running Jekyll on their own machines etc.
